Well the zucchini souffle didn't turn out so well. I am going to have to try it again in a different kind of pan. I tried cooking it in a large souffle dish but the center never seemed to get done. The recipe didn't recommend a dish size or shape. So I am going to try it again with a pyrex casserole dish, something that isn't as deep as a souffle. So then, why call it a souffle? Beats me.
I think I am going to move on from vegetables to deserts. Doesn't that sound more appealing anyway. Of course, that won't help me lose the 10 pounds I am trying to loose.
